This recipe was inspired by our many visits to the Mary Grace Cafe in Serendra (Manila) in the Philippines. (View my post about great Filipino restaurants.) It was our favourite cold drink to have with breakfast.When we returned to Canada, it was one of the first recipes my mom tried to recreate. Here is the result: a sweet and refreshing version of iced tea.
Peppermint and Fruit Iced Tea
For a pitcher.
Ingredients
- 1 bag of peppermint tea
- 1/4 cup of raspberry concentrate (or other berry concentrate)
- 6 cups water
Procedure
Boil 1 cup of water. Steep the tea until very dark. Pour into the pitcher. Add the fruit concentrate. Fill the pitcher with water. Refrigerate until cold.
