Brunch is not complete without something sweet! This recipe has served me well on many occasions; it’s great to have a simple but delicious recipe on hand for a brunch party – especially since waking up early is not my forte!
This recipe is from Donna Hay’s brilliant cookbook, Instant Entertaining.
Brunch Pastry
Serves 4 (when served with 2 other dishes)
Ingredients
- 360 grams (12.5 ounces) ready-prepared puff pastry (usually available in the freezer section of the supermarket)
- 4 tablespoons of strawberry jam or jelly
- 1/4 cup almond meal (or finely ground almonds)
- 1 apple, thinly sliced
- 100 grams (3.5 ounces) strawberries, thinly sliced
- 1 tablespoon sugar
Procedure
Preheat the oven to 190 Celsius (375 Fahrenheit). Roll out the pastry – about 1/8 inch thick. Cut into circles (the size is your choice!) Place circles on a non-stick baking tray or a tray lined with parchment paper. Spread jam onto each circle, leaving the edges free. Sprinkle the almond meal on top. Arrange the strawberry and apple slices on top and sprinkle with sugar. Bake for 15-20 minutes or until the pastry is puffed and golden.
Serve with 2 other brunch dishes and a good pot of tea!
